At Lake Carolina, children of the military are heroes! Join us April 15th at Village Green from 4-6pm, as we celebrate our military kids with a day full of exercise and fun.

 Co-sponsored by Jeep Rogers YMCA, kids of all ages can look forward to some great activities such as Zumba for kids, push-up and sit-up challenges, face painting, ice cream, and so much more! Come support our troops and their families at this wonderful event. We’ll race you there!

Grown-Up St. Patrick’s Day Cupcakes!

St. Patrick’s Day is fast approaching, and we’ve been invited to a few St. Patty’s Day parties. We like to come bearing gifts, and with these Chocolate Whiskey and Beer Cupcakes from Smitten Kitchen, we’re guessing that we’ll be welcomed with open arms!

Not only is the icing flavored with delicious Bailey’s Irish Cream, but your treat recipients will be greeted to the surprising, amazing filling inside: chocolate ganache. We guarantee that everyone will be begging for the recipe, but these can be your little secret!

What You'll Need:

For the Guinness Chocolate Cupcakes

1 cup stout (such as Guinness)
1 cup (2 sticks) unsalted butter
3/4 cup unsweetened cocoa powder (preferably Dutch-process)
2 cups all purpose flour
2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2 large eggs
2/3 cup sour cream

Ganache Filling (Updated to double it, based on many commenters suggestions — thanks!)
8 ounces bittersweet chocolate
2/3 cup heavy cream
2 tablespoons butter, room temperature
1 to 2 teaspoons Irish whiskey (optional)

Baileys Frosting (see Recipe Notes)
3 to 4 cups confections sugar
1 stick (1/2 cup or 4 ounces) unsalted butter, at room temperatue
3 to 4 tablespoons Baileys (or milk, or heavy cream, or a combination thereof)

Special equipment: 1-inch round cookie cutter or an apple corer and a piping bag (though a plastic bag with the corner snipped off will also work)
