Christmas is next week, which means there are just a few shopping days left to buy presents for your loved ones. But between work, ballet recitals, sports practices, grocery shopping, and whatever else you have going on, sometimes it’s hard to find the time. For those wishing for more hours in the day, we’ve got the perfect solution that’s easy to make, and won’t break the bank. Plus, there’s a huge payoff at the end: cookies!

Your loved ones will be touched by the gesture, impressed with your jarring skills, and most of all: excited to tear that jar open and make some delicious sugar cookies!

What You’ll Need:

For Cookie Mix
2 cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
1 cup sugar
1 cup sprinkles (any kind!)

For Gift Assembly
Parchment paper
Printed or written sugar cookie instructions (see below)
Optional: Cookie cutter and twine to tie it on

How to Make it:
Combine flour, salt, and baking powder in the jar.

Put sugar in a plastic bag or wrap it in parchment before adding to jar to keep it separate from the other dry ingredients.

Top with sprinkles. Optional: Tie cookie cutter to the jar with twine.

Lake Carolina Gives Back

Lake Carolina Wine & Food Festival Raises $16,000 for Children’s Charities of the Midlands

COLUMBIA, SC - Lake Carolina’s Annual Wine & Food Festival, which took place in October experienced a record number of attendees. Guests sipped & savored some of Columbia’s best food & wine on a beautiful fall afternoon on the Village Green at Lake Carolina. Proceeds from the event benefitted Children’s Charities of the Midlands, in which two special charities were chosen.

Palmetto Health Children's Hospital received $10,000 for their Palliative Care program. The program helps children and their families to achieve the best quality of life when living with life-limiting and chronic illnesses. This program provides comprehensive services to alleviate distressing symptoms; be they physical, psychological, spiritual, educational, or social. The team consists of a physician, nurse, child life specialist, social worker, and chaplain and is involved with the patient from the onset of their condition and works cooperatively with the primary physician providers as (potentially) curative therapies are pursued. Patients with cystic fibrosis, HIV, cancer, neurologic disorders, metabolic diseases, extreme prematurity and major trauma can benefit from Palliative Care services. Patients care for by Palliative Care teams have greater symptom control, spend less time in the hospital, have shorter hospital stays, and indeed, live longer than similarly matched patients not receiving Palliative Care services.

Abundant Life Lending Library in Lake Carolina received $6,000 from the Wine & Food Festival. The additional funds will help Columbia area children receive equipment to recover from devastating illnesses and accidents. Columbia did not have a durable medical equipment library. Abundance Life Equipment Lending Library, located at the Village Green, was established in October 2010 to meet this need.

Thanks to the amazing sponsor support the Lake Carolina Wine & Food Festival received this year, we were able to donate so much to these important children organizations.

Lake Carolina: All Lit Up for the Holidays!

Got plans this weekend? If so, you just might want to cancel them because the only way to officially kick off the holiday season is by attending Lake Carolina’s 11th Annual Harborside Lights! This Friday, December 13th, come see the Village Green and Town Center all lit up with enough twinkle lights and luminaries to fill every heart up with the holiday spirit.

If you love romantic carriage rides, meeting Santa (and getting your picture taken together!), delicious holiday treats, and other things that help to make the season merry and bright, then Harborside Lights is where you should be Friday night. And the greatest gift of them all: Admission is totally free!

Bring your friends, siblings, neighbors, and cousins, and join us December 13th for Harborside Lights! The fun beings at 6 pm.

Important Tips for Harborside Lights this Friday!

Dear Residents and friends of Lake Carolina:

This Friday, December 13th, Lake Carolina will hold our 10th annual Harborside Lights! We have so much in store for this fun event and can’t wait for you to all experience this annual Christmas Festival. As this event has grown and we have now partnered with the Jeep Rogers YMCA to add a 5K Run to the event, we have a lot more families coming to the neighborhood. Here are a few tips to keep in mind for Friday:

1 – Use alternate entrances if possible. The main entrance will have folks coming for the event as well as homeowners. If you are able to enter through Centennial, Ashland or Kelly Mill Rd– please do so.

2 – Harborside residents: Use your hang tags from Halloween to enter the community from the outside. If you don’t have one, go to Southern Community Services this week to pick one up. To get into the Harborside community between the hours of 5-9pm Fri, enter through the new commercial business park road (Jernigan Orthodontics) and then right onto Lake Carolina Blvd.

3 – If you are coming to the event from anywhere else in the neighborhood or driving back to Lake Carolina from downtown and coming straight to the event, please go to the YMCA and take one of the 2 shuttle buses we are offering for transportation to the event.

4 - If you don’t live in Lake Carolina and are coming to the event, please continue on Hardscrabble Road past the main entrance and take a right onto Kelly Mill Road, and then a right into the YMCA entrance. You can then take one of the 2 shuttle buses we are offering for transportation to the event.

Please remember to bring cash to pay for food, crafts, games, carriage and hay rides!
